Pasta with Italian Sausage, Tomatoes and Cream

This hearty pasta dish has been one of our go-to recipes for years. It’s a satisfying weeknight dish that can be prepared in about 30 minutes. (Serves 5-7 people)

Ingredients

1 tablespoon, olive oil

2 pounds Mossy Rock Ranch Italian pork sausage

1 cup chopped onion

3 garlic cloves, minced

1 15-ounce can crushed tomatoes

2 15-ounce cans tomato sauce

1 6-oz can Tomato paste

3/4 cup whipping cream

1 carton of cherry tomatoes, cut in half

1 pound of your favorite pasta

1/2 cup roughly chopped fresh basil for garnish

1 cup grated Parmesan

 

Method

Step 1

Heat oil in heavy large skillet over medium-high heat. Sauté until sausage is no longer pink, breaking up with back of fork, about 6 minutes.

Add onion and garlic. Sauté until onion is tender and sausage is browned, about 5 minutes longer.

Add crushed tomatoes, tomato sauce, tomato paste, and stir.

Reduce heat to low and simmer until sausage mixture thickens. Season to taste with salt and pepper.

Step 2

Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain.

Return pasta to same pot. Add sausage mixture to Pasta and stir over medium-low heat until combined evenly.

Stir in heavy cream and half the cheese.

Transfer pasta to serving dish or warm plates. Sprinkle with remaining cheese and basil. Enjoy.
