our wagyu beef

At Mossy Rock Ranch, our Wagyu and Angus cattle are rotationally grazed on open pasture year-round using regenerative farming practices. Our cows are raised without antibiotics, hormones, or vaccines, ensuring clean, natural beef. We breed our cows on the farm with our prized purebred Wagyu bull named Kobe. His lineage comes directly from original Japanese bloodlines and is registered with the American Wagyu Association.

 

Grass-Finished Beef

Our 100% grass-fed and finished cows are supplemented with locally sourced alfalfa hay during their final months. Grass-finished beef is leaner and contains up to six times more heart-healthy omega-3 fatty acids compared to grain-fed beef.

Grass-Fed and Grain-Finished Beef

Our grain-finished cows receive a daily ration of local grain in the last 4–6 months. This results in greater intramuscular marbling for enhanced flavor, tenderness, and texture.

21-Day Dry-Aged for Superior Flavor

All our beef is dry-aged for a minimum of 21 days — a process that enhances tenderness and creates a rich, nutty depth of flavor. Dry-aged beef is typically found in high-end steakhouses, but you can order our premium dry-aged beef directly from Mossy Rock Ranch and have it delivered to your door.


grass-fed Lamb

Our Cheviot sheep are rotationally grazed on pasture year-round to ensure that they are always grazing on fresh grass. In the Winter months we supplement with premium grass hay and local alfalfa to provide additional nutritional value.

In addition to offering a selection of cuts on a seasonal basis, we also sell our lamb by the half and the whole animal to encourage consumers to eat nose to tail. Nose to tail shows respect for the animal, and it’s a more sustainable way to purchase meat.

Heritage Pork

We raise Heritage Duroc-Berkshire-Yorkshire crossbreed pigs in our forested woodlands where they can free range and express their natural instincts to dig and root, and graze on plants and grasses. We rotate them through different sections where they love to forage for roots, berries, shrubs, grasses and leaves. They are raised all natural out in the open and are 100% antibiotic-free, hormone-free and vaccine-free.

Our heritage breeds are fed grain from a local mill. This mix of foraging and grazing results in a rich deep flavor profile not found in conventional store bought pork. We raise our animals with respect and kindness using the highest ethical standards for animal welfare.
